What Is Offal?
Offal refers to the edible organs and less-common cuts of an animal that go beyond familiar steaks and roasts. Historically, these cuts were prized for their nutrition and flavour, but over time they became less common in mainstream cooking. But these cuts are making a comeback and may just deserve a spot on your plate!
At Yankee Flats Meats, offal includes:
- Liver
- Heart
- Kidneys
- Tongue
- Spleen
- Oxtail
- Cheeks
- Hanging Tender (also known as hanger steak)
These cuts are available in our shop and can also be included in quarter, half, or whole beef orders.
Why We Use the Whole Animal
Whole-animal utilization is at the core of what we do.
Using as much of the animal as possible:

The Nutritional Benefits of Offal
Offal is often referred to as nature’s multivitamin, and for good reason.
Liver
Rich in iron, vitamin A, B12, folate, and zinc. One of the most nutrient-dense foods you can eat.
Heart
High in protein, iron, selenium, and CoQ10, which supports heart and muscle health.
Kidneys & Spleen
Excellent sources of B vitamins, iron, and essential minerals that support energy and immune function.
Oxtail & Cheeks
High in collagen and connective tissue, making them great for joint health and slow-cooked comfort meals.
Hanging Tender
A lesser-known steak with deep beef flavour, prized for its tenderness when cooked properly.
How to Get Started with Offal
If offal feels intimidating, start simple:
- Try our carnivore ground beef which is 10% beef organs (liver, tongue and heart)
- Add oxtail to soups or stews
- Try beef cheeks braised low and slow
